Holiday Greetings from Chef Barrae
The whirlwind of the holiday season is here and I wanted to wish everyone a very happy holiday. The holidays can be difficult for many people due to the tough economic times we all face. It is nice to know that the warmth of family and friends is truely all we need. The lack of material wealth makes us appreciate our true wealth of family and friends so much more. But not everyone has someone. So take the time to invite a neighbor who you know is alone into your home and share your warm celebration with them. This is also the time to volunteer at a homeless shelter or soup kitchen and bring hope to many people who are down the most. Sharing your time doesn’t cost you anything but is priceless to others and is one of the best gifts you can give.
The holiday season is also especially stressful from a diabetic point of view. Dealing with all of the temptations and bounty of an array of delicious goodies constantly set out before you can be difficult. I’ve learned some simple tips along the way and would like to share them with you. If you are going to be attending holiday parties enjoy a healthful snack before you go. This way you’ll be less tempted to over indulge in the foods you shouldn’t have because you won’t be as hungry. If you can, bring a dish to the party. Make something festive and wonderful that you know you can safely eat. I am sure the hostess will appreciate this gesture as well. By bringing your own dish you’ll be sure to have a delicious and safe choice at the party. When you do indulge in some goodies at the party limit yourself to a tablespoonful of each dish you want to eat. Give yourself the permission to enjoy these special foods and savor every moment of eating them. Take the time to think about what you would enjoy having the most before you go to the party. Choose three foods and stick to your plan. And of course make sure you drink plenty of water. Also think about having a wine spritzer instead of that glass of wine. To make a wine spritzer just add sparkling water or seltzer to about a half glass of wine. Add a squeeze from a lemon or lime for an extra boost in flavor. These tips lighten up your drink and taste so good. And by having less alcohol you may be able to stay in better control of your party plan.
Being home for the holidays is a joyful thing. I always picture the idealic scene of new fallen snow blanketing everything, the smell of wood burning fireplaces wafting through the air as the puffs of smoke drift under a grey-white sky and the warm glow from the twinkling lights on a beautifully decorated Christmas tree as the family gathers around. If you are preparing the holiday dinner or having a holiday party please be sure to check my blog for new recipes posted daily. You’ll find a variety of recipes for everything from soup to nuts as well as chocolate confections that make wonderful gifts for your favorite diabetic family member or friend. Home made confections are simple, inexpensive and are probably one of the most appreciated gifts you can give. Not only are you giving someone a sweet treat that the can enjoy guilt free but you are giving them a piece of yourself by taking the time. The recipes I create are not just for diabetics. My philosophy has always been “Eat, live and enjoy life” and I mean that. As part of the process of testing recipes I have conducted simple, unscientific, blind taste tests. The fact that these food creations were diabetic friendly went almost completely unnoticed by everyone. You can feel confident to serve my dishes to everyone and feel secure that they will enjoy them. I am also available by email to answer any of your cooking questions.Feel free to ask me your food questions or for help to solve your kitchen disaster.
As part of my thank you to everyone here for reading my articles I have made a slide show. It features photographs of all of my special sweet treats and desserts and it will make you drool. Please watch it and enjoy it. You can find it at:

Once again, my warmest wishes to you and your family for the holiday season and a very happy, healthy and prosperous new year to come. I raise my glass in a toast to you and thank you for your loyal support over the past few months and I look forward to sharing so much more with you in the coming new year.
Eat, live and enjoy life!
Happy Holidays,
Chef Barrae

Reasons Why La Digue is a Top Quality Holiday Destination
La Digue is famous in the Indian Ocean for many reasons. Its beautiful landscapes, the numerous white sandy beaches, the National Park, the oxcarts and its world class hotels among others make of it a first class holiday destination. People from various corners of the globe land on La Digue to break off from the modern, noisy and busy world. They come in search for the wild and undeveloped aspect. La Digue proves them right because it can effectively meet their needs.
Filled with around 2,000 inhabitants, La Digue can boast to be the third most populated island among the Seychelles. The locals of La Digue gain their living rather comfortably by doing business with tourists who are very frequent on the island. In fact, La Digue’s main source of income is tourism. Long ago, who would have believed that La Digue would turn out to be a tourism attraction? These days you just need to have a glance at La Digue Island Lodge and judge by yourself. This high calibre hotel is a favourite holiday lounge for many tourists.
Moreover, on the island there is a nice church named as The Lady of Our Assumption. This famous church is close to reaching a century of existence and is located near the port or to the South of La Digue Island Lodge. So, when you make the trip to La Digue, do not forget to have a look at this mythical place. You could take some shots and bring back these sweet memories home for your friends and relatives to see. Furthermore, a few minutes of walk nearby would bring you to a plantation where you would be able to see the gathering of coconuts or even the vanilla crops.
If you require the taste of wildlife and adventure, trek to the top of the mountain found in the middle of La Digue. From there you would be able to get an extraordinarily picturesque view of the entire island. You would be able to see most of the beaches and the roads which lead to them. No matter what, you would be pleased to have spent some energy and climbed on top of the mountain because what you get in return is really worth it. Actually, whatever you have come to do on La Digue, you will be assured of a warm welcome. Inhabitants of La Digue are very friendly. You just need to move around to notice this.
