Holiday Greetings from Chef Barrae

The whirlwind of the holiday season is here and I wanted to wish everyone a very happy holiday. The holidays can be difficult for many people due to the tough economic times we all face. It is nice to know that the warmth of family and friends is truely all we need. The lack of material wealth makes us appreciate our true wealth of family and friends so much more. But not everyone has someone. So take the time to invite a neighbor who you know is alone into your home and share your warm celebration with them. This is also the time to volunteer at a homeless shelter or soup kitchen and bring hope to many people who are down the most. Sharing your time doesn’t cost you anything but is priceless to others and is one of the best gifts you can give.

The holiday season is also especially stressful from a diabetic point of view. Dealing with all of the temptations and bounty of an array of delicious goodies constantly set out before you can be difficult. I’ve learned some simple tips along the way and would like to share them with you. If you are going to be attending holiday parties enjoy a healthful snack before you go. This way you’ll be less tempted to over indulge in the foods you shouldn’t have because you won’t be as hungry. If you can, bring a dish to the party. Make something festive and wonderful that you know you can safely eat. I am sure the hostess will appreciate this gesture as well. By bringing your own dish you’ll be sure to have a delicious and safe choice at the party. When you do indulge in some goodies at the party limit yourself to a tablespoonful of each dish you want to eat. Give yourself the permission to enjoy these special foods and savor every moment of eating them. Take the time to think about what you would enjoy having the most before you go to the party. Choose three foods and stick to your plan. And of course make sure you drink plenty of water. Also think about having a wine spritzer instead of that glass of wine. To make a wine spritzer just add sparkling water or seltzer to about a half glass of wine. Add a squeeze from a lemon or lime for an extra boost in flavor. These tips lighten up your drink and taste so good. And by having less alcohol you may be able to stay in better control of your party plan.

Being home for the holidays is a joyful thing. I always picture the idealic scene of new fallen snow blanketing everything, the smell of wood burning fireplaces wafting through the air as the puffs of smoke drift under a grey-white sky and the warm glow from the twinkling lights on a beautifully decorated Christmas tree as the family gathers around. If you are preparing the holiday dinner or having a holiday party please be sure to check my blog for new recipes posted daily. You’ll find a variety of recipes for everything from soup to nuts as well as chocolate confections that make wonderful gifts for your favorite diabetic family member or friend. Home made confections are simple, inexpensive and are probably one of the most appreciated gifts you can give. Not only are you giving someone a sweet treat that the can enjoy guilt free but you are giving them a piece of yourself by taking the time. The recipes I create are not just for diabetics. My philosophy has always been “Eat, live and enjoy life” and I mean that. As part of the process of testing recipes I have conducted simple, unscientific, blind taste tests. The fact that these food creations were diabetic friendly went almost completely unnoticed by everyone. You can feel confident to serve my dishes to everyone and feel secure that they will enjoy them. Mary Hart- Pumpkin Entertainment Tonight: An Excerpt from The Great Pumpkin Letters

Chief Crazy Captain Christo was traveling recently(2009) and came across a news reporter to The STARS. This reporter seemed to focus on rich people a lot so Chief Crazy Captain Christo decided that Mary Hart from Entertainment Tonight fame needed a slight change in FOCUS. So he decided to disguise himself as an O-Range Blob of Light and the rest as they say is history! We interrupt the conversation on the set of Entertainment Tonight. This is a TRUE story. Mary Hart’s name has been changed to Ma Ha to keep her privacy intact. On with the Pumpkin Entertainment Tonight segment of The Great Pumpkin Letters.

MA HA- ” And Grant Heslov’s new movie Men Who Stare At Goats starring the fabulous George Clooney and a slew of other stars is coming to a theatre near you November 6th. Hey Mark can you get that Orange light fixed. It is glaring right into my eyes . Mark, are you there Mark. Mr. Steines you hoo the Orange light is blinding me and I can’t see anything…”

Little did MA HA know that Chief Crazy Captain Christo was on the set of Entertainment Tonight and had actually paid Mark Steines and Thea Andrews a compliment. So without interrupting the Good Chief Crazy Captain Christo ( disguised as the O-Range Blob of Light), they let him talk to MA HA. The O-Range Blob of Light went straight up to MA HA and offered her a laser etched gift that MA HA accepted before the fright building up inside her trembled to the surface.

MA HA- ” Who are you? And what do you want with me? ”

O-Range Blob of Light-” Hi! Mary Hart er I mean MA HA. I am Chief Crazy Captain Christo and I have been sent to you on behalf of The Great Pumpkin. We have seen your work and it is GOOD!

Would you like to be invited to a PARTY? Before you answer, let me finish. The party is for Warren Buffett on July 9th 2010 in Omaha. The “Party for a Purpose” will be the theme and only one news team will be allowed inside. We have deemed Entertainment Tonight as that news team that will be allowed inside. All others will be locked out. Can you attend the party MA HA? The Party for a Purpose will be revealed but I will give you a sneak peak right now!”

Through the power of the O-Range Blob of Light, MA HA was transported to the pre-construction site of ” The Tree House”. MA HA gazed in wide wonder at the joy she felt welling up inside her. She turned to the O-Range Blob of Light and described what she was feeling while she was watching happy construction workers who were not high or on drugs building the most beautiful place imaginable.

MA HA- ” This is so beautiful. Where is it? Wow look at that. Every thing you could ever want is here. That is the most beautiful stage I have ever seen. Wow and the restaurants and the hotels and everyone is working together. Everyone is so happy and joyous! Wait a minute are these robots?

O-Range Blob of Light- ” MA HA, what you are seeing is true teamwork in action. Everyone is here because they want to make this the most special place on EARTH for one little girl. In so doing, they are seeing the value of working together. It can happen anywhere but it is happening here. You have been given a sneak peak because well MA HA , without you, I probably would not have taken any action myself.

MA HA-” Chief Crazy Captain Christo, why can’t I see you clearly?”

O-Range Blob of Light-” Until construction is completed, no one will see me completely. Your job MA HA is to gather up your team and help get the word out. By the way, MA HA, would you like your own complimentary backstage soundstage with lighting at the Tree House.

MA HA- ” Would I! What do I have to do?

O-Range Blob of Light- ” Just continue to do what you do and I will do what I do and we will meet in the middle ok MA HA?”

MA HA -” DEAL! Hey Chief Crazy Captain Christo, one question for you, I thought The Great Pumpkin was a Charles Schultz production. Aren’t you afraid of lawsuits or something like that?

But with that question the O-Range Blob of Light was off the set and Mary Hart was left at Entertainment Tonight’s Television set muttering to herself and her co-workers were giggling.

Adrian Peterson: The Lord’s Prayer and Forgiveness: Excerpt from The Great Pumpkin Letters

Yo Adrian You did it! ( Authors note: changed one word from the film Rocky)

Yo Adrian Peterson from the Minnesota Vikings, #28 Running back extraordinaire. I’d like to introduce myself. I am Chief Crazy Captain Christo, a character in a “screenplay” being written by a huge Viking fan. The Screen plays you are used to Adrian usually wind up with you making an awesome run into the end zone for a touchdown. This screenplay is a little different so bear with me while I try to explain.

The character of Chief Crazy Captain Christo starts off from the nineteenth century (1892 to be exact but there is an aura of mystery as to the exact date. Some would offer the date up to be 1877). Anyways, Chief Crazy Captain Christo is nearing the end of his run, said to be around 2034. Before he ends his run and rides off into the sunset, he has one lesson he learned he would like to offer to you Adrian.

It is quite simple yet complicated at first. The lesson comes from the number FOUR. I will break it down as such. The letter F starts the number four. You have a quarterback named Favre with the number Four so actually this is a piece of cake to explain. Since I started with F, let’s go Adrian. F starts the word Forgiveness. It also starts the word Father. The second third and fourth letters form OUR. Now in the Lord’s Prayer Our Father who art in heaven…. you probably have heard of that one. The twenty eighth word in the prayer is “day” according to the 1928 version from wikipedia. Your father Nelson nicknamed you A.D. Or All Day. Now get ready to be energized.

The thirty third word in the prayer is FORGIVE. Jesus was thirty three or so they say. On your wikipedia page it mentions you as Purple Jesus. Make the connection and turn it around Adrian. Forgive your Father now!

Oh you want more proof! Ok. ( Oklahoma) OU ( Sooner) R (Revelations) What does this have to do with The Great Pumpkin? I almost forgot. Most people relate The Great Pumpkin to Halloween and Pumpkins and the color Orange. I’m getting there now. Why do you Fumble Adrian? I know it is a touchy subject but let me explain in a way that will help.
